Cabris: khu vườn làm chỗ quan sát

Cabris là một làng nhỏ trên đồi thuộc vùng Alpes Maritimes, nhìn xuống vùng đất trồng hoa quanh Grasse. Khoảng năm 1948, Edmond Roudnitska chuyển về đây. Ông dựng phòng làm việc và làm một khu vườn.

Khu vườn ấy không phải để ngắm. Nó là một nơi thử. Ông trồng hoa linh lan, loài hoa nhỏ màu trắng hình chuông, nở vào mùa xuân. Linh lan có một điểm đặc biệt với người làm mùi: nó không cho tinh dầu. Không có cách nào cất hay chiết mùi của nó ra để dùng. Mọi mùi linh lan trong chai đều là mùi dựng lại, từ những chất khác, theo trí nhớ và theo mắt mũi của người làm.

Roudnitska chọn không dựa vào trí nhớ. Ông trồng hoa để có bông hoa thật ở ngay bên cạnh. Mỗi lần thử một công thức, ông đưa nó ra so với bông linh lan đang nở. Nhưng linh lan chỉ nở trong một thời gian ngắn mỗi năm. Vì vậy công việc của ông bị buộc vào lịch của cây: mỗi năm chỉ có vài tuần để so, rồi phải chờ sang năm.

Cách làm này nói lên một điều. Với Roudnitska, người làm mùi trước hết là người nhìn. Công thức phải trả lời cho một vật có thật.

Diorissimo và Eau Sauvage: hai bài tập về tiết chế

Kết quả của những mùa linh lan ấy là Diorissimo, ra mắt năm 1956 cho nhà Christian Dior. Bối cảnh lúc đó: nước hoa sau chiến tranh thường dày, nhiều xạ, nhiều hổ phách, nhiều phấn. Roudnitska muốn một thứ nhẹ hơn. Theo lời con trai ông, Michel Roudnitska, kể với tạp chí Nez, công thức Diorissimo ngắn hơn hẳn những công thức cùng thời.

Cũng theo Michel, giữa Roudnitska và Christian Dior có một sự tôn trọng lẫn nhau. Dior ghé Cabris khi xuống miền Nam. Diorissimo được chấp nhận khá nhanh, không phải sửa đi sửa lại nhiều lần.

Mười năm sau, năm 1966, Roudnitska làm Eau Sauvage cho Dior. Đây là một mùi cologne, loại mùi cam chanh nhẹ vốn có từ thế kỷ mười tám. Ông viết lại nó bằng một nguyên liệu mới lúc đó: Hedione, một phân tử do Firmenich tìm ra từ việc nghiên cứu hoa nhài, cho cảm giác sáng và rộng. Eau Sauvage thường được nhắc như nước hoa thương mại đầu tiên dùng Hedione ở mức đáng kể.

Hai mùi khác nhau, một hoa, một cam chanh. Nhưng cả hai đi theo cùng một hướng: bỏ bớt, để cho vật thở.

Một người điều hương viết về mỹ học

Roudnitska không chỉ làm mùi. Ông viết. Năm 1977, nhà xuất bản PUF in cuốn L'Esthétique en question của ông, một cuốn sách về mỹ học. Năm 1980, ông viết tập Le Parfum trong bộ sách nhỏ Que sais je? của cùng nhà xuất bản.

Điều ông muốn nói khá thẳng: mùi có thể là một tác phẩm, và nên được xét như tác phẩm. Người làm mùi có hình thức, có lựa chọn, có ý định. Người ngửi có thể học cách nhìn những điều đó, như người xem học cách nhìn một bức tranh.

Thời ấy, ý này không phổ biến. Nghề làm nước hoa được xem là nghề của các hãng, gắn với thương mại và thời trang. Việc một người điều hương đứng ra viết về mỹ học là một cách đặt nghề mình vào một cuộc trò chuyện khác. Trong một buổi nói chuyện của Osmothèque, ông được giới thiệu là một người điều hương vừa là nhà mỹ học vừa là nhà triết học.

Mùi như tác phẩm: điều Roudnitska để lại

Mấy chục năm sau, những câu hỏi của Roudnitska vẫn còn đó. Các bảo tàng bắt đầu trưng bày mùi. Người ta bắt đầu ghi tên người điều hương bên cạnh tên nhà mốt. Nghệ sĩ làm việc với mùi như một chất liệu, không cần chai, không cần nhãn.

Không phải tất cả những điều ấy đến từ ông. Nhưng ông là một trong những người đầu tiên nói ra, bằng chữ, rằng mùi đáng được nhìn kỹ như vậy.

Điều Penta nhớ nhất vẫn là khu vườn. Penta hình dung một người đứng giữa những bông linh lan, cầm một dải giấy thử, đưa lên mũi, rồi cúi xuống ngửi bông hoa, rồi đưa lên mũi lần nữa. Mỗi năm vài tuần. Tác phẩm bắt đầu từ việc chịu nhìn một vật cho đến khi hiểu nó.


Cabris: a garden as a place to observe

Cabris is a small hill village in the Alpes Maritimes, looking down over the flower growing land around Grasse. Around 1948 Edmond Roudnitska moved there. He set up a workroom and made a garden.

The garden was not for looking at. It was a place for testing. He planted lily of the valley, the small white bell shaped flower of spring. For anyone making smells, lily of the valley has one peculiarity: it yields no oil. There is no way to distil or extract its smell for use. Every lily of the valley in a bottle is rebuilt, from other materials, by memory and by the maker's senses.

Roudnitska chose not to rely on memory. He grew the flower so the real thing would be beside him. Each time he tried a formula, he held it up against the lily in bloom. But the lily flowers only briefly each year. So his work was tied to the plant's calendar: a few weeks a year for comparing, then a wait until the next spring.

The method says something. For Roudnitska, the maker of smells was first of all an observer. A formula had to answer to a real thing.

Diorissimo and Eau Sauvage: two exercises in restraint

Those lily seasons led to Diorissimo, launched in 1956 for the house of Christian Dior. The context: post war perfumes tended to be heavy, full of musk, amber and powder. Roudnitska wanted something lighter. According to his son Michel Roudnitska, speaking to Nez magazine, the Diorissimo formula was notably short compared with those of its time.

Michel also describes a mutual respect between Roudnitska and Christian Dior. Dior visited Cabris when he came south. Diorissimo was accepted fairly quickly, without many rounds of revision.

Ten years later, in 1966, Roudnitska made Eau Sauvage for Dior. It is a cologne, the light citrus form that goes back to the eighteenth century. He rewrote it with a material new at the time: Hedione, a molecule Firmenich found through research on jasmine, which gives a sense of brightness and space. Eau Sauvage is usually cited as the first commercial perfume to use Hedione at a significant level.

Two different smells, one floral, one citrus. Both go the same way: take away, and let the thing breathe.

A perfumer writing about aesthetics

Roudnitska did not only make smells. He wrote. In 1977 the publisher PUF printed his L'Esthétique en question, a book on aesthetics. In 1980 he wrote the volume Le Parfum in the same publisher's short Que sais je? series.

His point was direct: a smell can be a work, and should be judged as one. The maker has form, choices, intentions. The person smelling can learn to perceive those things, as a viewer learns to look at a painting.

At the time this was not a common view. Perfume was seen as the business of houses, tied to commerce and fashion. A perfumer writing about aesthetics was placing his craft in a different conversation. In an Osmothèque lecture he was introduced as a perfumer who was both aesthete and philosopher.

Smell as a work: what Roudnitska left

Decades later his questions remain. Museums began to show smells. Perfumers' names began to appear next to fashion houses. Artists work with smell as a material, with no bottle and no label.

Not all of that came from him. But he was among the first to say, in writing, that smell deserves to be looked at this closely.

What Penta remembers most is still the garden. Penta pictures a man standing among lilies of the valley, holding a paper strip, raising it to his nose, bending to smell the flower, raising the strip again. A few weeks each year. The work begins with being willing to look at a thing until one understands it.
